The fillet is produced Clavesana Barolo (Cuneo).

It is a meat sausage and cheese, is obtained by processing the whole fillet of pork, salting and subjected to macerate in the wine Barolo DOCG which absorbs the flavor.

Shear is dark red and unique aroma, fragrant and delicate.
