Zampitti

Puglia (Apulia)

Sausage long and thick as a finger, obtained from residues of veal, lamb, pork, salted and sprinkled with plenty of chilli.

You can eat butcher roasted zampitti in Laterza, Ginosa, Gioia del Colle. At Sammichele Bari they are called zampina.

Zampitti are often flavored with Pecorino or fennel seeds and are best on the grill.
