Mugnano del Cardinale and Quadrelle, Avellino, Campania


“Nothing is thrown away” of the pig, and in the towns on Mugnano del Cardinale and Quadrelle, in the province of Avellino, pig fat is worked to obtain pork scratching. Pork scratching are the result of boiling the fat parts of the pig in a big saucepan, the liquid part will form suet once solidified, while the little residual blocks are the pork scratching. They are definitely a traditional food, with a strong and peculiar flavor, rich in fat; pork scratching are still used to this day in Campania cuisine, especially as filling for rustic pizzas and cakes.
