Valchiavenna and Valtellina (Sondrio) Lombardy
Typical Product Valchiavenna and Valtellina (Sondrio).
To be consumed after cooking raw sausage composed of pork rind and minced spiced, stuffed into beef casings.
It appears as strands of 13-15 cm long, 5-6 cm in diameter, 180 grams of weight.
Other sizes are possible, however, more rare.
The outer surface is a clear, almost white, as the dough is soft with a tendency to rattle.

Gut: natural beef with a diameter of 50-60 mm

Peeling of the rind
Grinding medium grain pigskin
Preparation of tanning
Adding the tanning
Mixing until homogeneous dough
Transfer to the bagging machine
