The bacon is produced in different areas of Piedmont, in particular to Cavour (Turin) and Ronco Biellese (Biella).
Represents the subcutaneous fat of a carcase of the pig, there are also veins formed by muscle bundles.
It can be tanned and seasoned with spices and herbs for several months.
It is firm to the touch, the fat is milk white in color, while lean has a color ranging from pink to bright red, smell and taste are mild.
The size is between 2 and 4 kg.
