The cooked liver mortadella  is produced in Novara and Vercelli, particularly in hilly areas of low Valsesia.

It is a sausage that size can exceed 2 kg, as a characteristic virtue of containing the meat, fat and liver of the pig.

The amount of liver present conditions the color, which is more or less dark red, and flavor that is more or less spicy.
