Val d’Ossola (VB), Piedmont
The Ossola Mortadella is produced in the Ossola Valley (Verbania).
It is a raw sausage in dough covered in pork fat and pork liver in a minimum percentage.
The sausage is made from folding on itself and tying it to the center, that gives it a very special form.
The size is about 200-300 g.
The color of the slice varies from red to brown.
