Mozzariello is a salami produced in the province of Naples, in particular in the Flegrean area and in the areas of Giugliano, Acerra and Nola. It’s a sausage contained in natural intestines, long 10-15 cm and rather thin, it has a diameter of only 2-3 cm.

Pig meat, some of its interior and a lot of chili peppers are used to prepare it. At the end of the preparation, mozzariello can be fumigated and then it has to age for about a month. It is a very ancient product and it represents one of the main ingredients to prepare the famous married soup (minestra maritata).
