The “pezza” of Fabriano prosciutto identifies the lower part of the ham bone including bacon and rind.
Is prepared with salt and ground pepper, perfume of wine, vinegar, garlic and herbs in the mountains, without other ingredients.
The period of maturation varies depending on the size of the product and is between 120 and 150 days.
