The goat salami is a typical product of Valcamonica. Is obtained by using selected parts of the goat (leg and shoulder), who are deprived of fat and nerve tissues. The meat is minced pork with the bacon gives the product softness and sweetness.
All’antipasto are then added spices, garlic and red wine. The sausage is stuffed into natural casings and ripened for 60 days.
Tips: goat sausage is excellent as an appetizer, accompanied by red wine Franciacorta and Valtellina.
